Bombay Roasted Potatoes

908 gm White potato
2 tsp Turmeric, powder
2 tbsp Canola oil
1 tsp Salt
4 tbsp Sweet chili sauce
1/4 cup Parsley, fresh


Cut potatoes into 1-inch cubes. Do not peel.

In a bowl combine potatoes with turmeric, oil and salt. Mix well.

Place potatoes in an oven tray and bake for 30 minutes at 350°F. Mix half way through cooking so they cook evenly.

Put the potatoes in a serving bowl.

Drizzle sweet chili sauce over the top and garnish with parsley.

Note: Each serving is a 1/2 cup.
