Breakfast sweet potato

A warming and nourishing breakfast featuring roasted whole sweet potato, warmed wild blueberries, crushed walnuts and hemp hearts.

Ingredients


1 medium potato Sweet potato
3/4 cup Frozen blueberries (defrosted)
2 tbsp Walnuts (crushed)
1 tbsp hulled Hemp seeds, shelled
1/4 tsp Cinnamon (true or Ceylon variety)

Instructions


1. Preheat oven to 400F. 

2. Pierce sweet potato on all sides 

3. Remove frozen blueberries from freezer and set in a pot on low heat 

4. Place pierced sweet potato on a lined baking sheet and transfer to the oven to roasted for 45 minutes or until tender to poke with a fork. 

5. Remove sweet potato from oven. Slice down the middle of the sweet potato allowing for some of the steam to release. Sprinkle the cinnamon onto the sweet potato and mix it into the flesh. 

6. Top sweet potato with warmed blueberries, chopped walnuts, and hemp hearts.
