Also tossed in some uncooked squash that was sitting in the fridge. This recipe is very forgiving and you can add whatever you've got on hand. The lemon and onions aren't that strong after all so go ahead and use the whole lemon and both onions! Wash, chop and combine all ingredients together in a large bowl, give it a good tossing and bake in large baking pan lined with parchment paper, stirring occasionally. If the veggies are drying out or browning but still too hard, cover with foil.
Bake on about 300 F for about three hours, and stir occasionally.
