2 medium Zucchini
2 medium Yellow onion
5 potato Potato
3 medium Tomato
1/2 cup Extra virgin olive oil
5 clove(s) Garlic
1 tsp Oregano, dried
1 pepper(s) Red chili pepper (also chile or chilli)
1 tsp Mint, dried
1 medium Lemon (cut into wedges)
1 pinch Salt and pepper (sea salt)
1/4 cup Water


1. Wash, chop and combine all ingredients together in a large pan, sprinkling the spices on top.

2. Bake on about 150C for about three hours, and stir occasionally.

Serve and enjoy!


Serve with - Greek marinated chicken thighs

or Grilled Chickpeas!
