1 cup | Broccoli, raw |
1/4 tsp | Garlic powder |
1 cup shredded | Mozzarella cheese |
2 tbsp | Olive Oil, Extra Virgin |
1 dash | Salt (or to taste) |
1/4 cup | Sweet yellow corn |
4 large tortilla(s) | Wheat flour tortilla |
1. To Cook Broccoli:
2. Combine broccoli with cheese, corn and garlic powder. Add salt and pepper to taste.
3. Divide mixture in four, for each tortilla. Add the mixture on one half of the tortilla and fold the other half over the mixture.
4. Grease a large frying pan using 1 teaspoon of oil. Heat frying pan over medium heat, about 3 minutes.
5. Carefully add two folded tortillas side by side and cook until golden. Flip and cook on the other side too. Cheese should be melted and tortillas gold and crisp.
6. Remove from heat. Repeat this step with the other two folded tortillas.
7. Cut quesadillas in half or in thirds and serve warm.
