Broiled Grapefruit with Ginger

1/4 cup Candied ginger, uncrystallized (chopped)
2 grapefruit Grapefruit (pink or red)
1/4 cup Honey
1/4 cup Mint, fresh (thinly sliced)
1/3 cup seeds Pomegranate seeds


Preheat the oven’s broiler.

Slice the grapefruits in half and place on a parchment paper-lined baking sheet. Cut a small slice off the bottom of each half to help them stand upright.

Using a small pairing knife, loosen each section of grapefruit by making small cuts between the fruit, the peel, and the membrane on either side. In a small bowl, mix together honey and ginger. Drizzle mixture over each grapefruit half and place in the oven to broil for 5 minutes.

Garnish with pomegranate seeds and mint.

Serve and enjoy!
