Bring the rice to a boil on medium-high heat in 2 cups of water. Dial the heat back to medium-low and let the rice cook through until the water evaporates. After all the water has evaporated if the rice still has not cooked through, add more water and continue cooking.
Heat 1 tbsp of olive oil in a large pan and sauté leek and garlic for 2 minutes. Add sweet red pepper, stir and cook for 2 minutes. Add spinach and cook till it gets soft. Add rice, 1 tbsp of olive oil and stir.
Put rice with vegetables to the sides of the pan and break the eggs in the center of the pan and fry them, stirring. Add soy sauce and stir.
