Bruschetta Salad

A great side dish, or eat it as a meal. It's so delicious and can be recycled easily to make something new if you want to change it up.


8 medium Tomato
3 clove(s) Garlic
1/4 cup Extra virgin olive oil
10 leaf Basil, fresh (chopped)
1 1/2 tsp Italian herb seasoning, McCormick
1/2 small Red onion (diced)
1/2 tsp Sea salt, fine
1 dash Black pepper (to taste)
1 cup crumbled Baguette, French bread (you can use any type of bread or omit from recipe)
2 tbsp Parmesan cheese, vegan


Chop all ingredients as directed. Mix in a medium size bowl except bread. Let sit.

Before serving, add chopped bread and parmesan cheese

Parmesan cheese - 1 cup raw cashews, 2 tablespoon nutritional yeast., 1 teaspoon garlic powder, 1/4 teaspoon smoked paprika, 1 pinch pink himalayan salt,  - add to blender and pulse until a fine crumble. Store in a jar in the fridge and sprinkle on everything!
