Lettuce Wrapped Turkey Tacos

Ingredients


2 tsp Chili powder (for taco seasoning)
1 1/2 tsp Cumin (for taco seasoning)
1/2 tsp Paprika, smoked (for taco seasoning)
1/2 tsp Red pepper flakes (for taco seasoning; to taste)
1/4 tsp Garlic powder (for taco seasoning)
1/4 tsp Onion powder (for taco seasoning)
1/4 tsp Oregano, dried (for taco seasoning)
1/4 tsp Black pepper (for taco seasoning)
1/4 tsp Salt (for taco seasoning)
1 tbsp Olive Oil, Extra Virgin
2 clove(s) Garlic (minced)
1 medium pepper(s) Red bell pepper (diced)
454 gm Ground turkey, extra lean
1/2 cup Green onion (chopped)
1 cup Cilantro (coriander) (chopped)
4 tsp Lime juice (fresh)
6 large leaf (s) Iceberg lettuce (wash, dry, and chop off ends)
1 avocado(s) Avocado (diced)

Instructions


  1. Add the chili powder, cumin, paprika, red pepper flakes, garlic powder, onion powder, oregano, pepper, and salt to a small bowl. Stir to combine to make the taco seasoning. Set aside.
  2. In a non-stick pan, warm oil over medium heat. Add the minced garlic bell pepper. Saute until the bell pepper softens. 
  3. Stir in the taco seasoning to coat the pepper and garlic mixture, then transfer to a plate or bowl and set aside.
  4. Add the ground turkey to the pan and cook until the turkey is no longer pink. 
  5. Toss the seasoned bell pepper in with the turkey and add the green onions. cook for 2 more minutes. 
  6. Stir in the chopped cilantro and lime juice. 
  7. To serve, add the ground turkey mixture to the inner folds of the lettuce leaves. Top with avocado and enjoy.

Notes:

Quick Tips:

  • Top with any additional toppings of your choice. Suggestions include reduced-sodium salsa, shredded cheese, reduced-fat sour cream or plain Greek yogurt, guacamole, mashed black beans, etc.
  • Use a store-bought reduced-sodium taco seasoning packet to save time.
