Buckwheat Banana Bread, Gluten-Free

Ingredients


1/2 tsp Baking powder
1 tsp Baking soda
3 medium Banana (mashed)
1 cup Buckwheat flour
1 tsp Cinnamon
2 1/2 tbsp Coconut oil (melted)
2 medium egg Egg (whisked)
2 tbsp Maple syrup (optional)
1/4 tsp Salt
1 tsp Vanilla extract, pure
3 tbsp Water

Instructions


Preheat oven to 350F.

In a large bowl, combine the dry ingredients. In a separate bowl combine the wet ingredients. Add the wet to the dry ingredients and stir until combined. Pour into a greased loaf pan.

Baked for 25 to 30 minutes. I now have a convection oven which cooks things a little faster. It is done when a fork or knife comes out clean.
