1/4 cup Buckwheat groats, dry
2 large egg Egg
2 tbsp Coconut oil (extra virgin)
2 green onion (stem) Green onion (1-2 springs, finely chopped)
1/4 cup Cilantro (coriander) (about a handful - finely chopped)
1 tbsp Plain yogurt, 1- 2% M.F.
1 pinch Salt (to taste)


Cook the buckwheat groats as directed.

Pan fry the spring onions with oil for a minute, then add the eggs, buckwheat and cilantro.

Stir in the pan until the eggs are done to your liking.

Now add a sprinkling of salt, cover with the plain yogurt and serve.
