Ingredients


2 medium Egg (pasture raised; poached)
1/2 avocado(s) Avocado (sliced)
2 medium Carrots (chopped)
2 medium Radish (chopped)
1/2 cucumber(s) Cucumber (chopped)
1 cup Spinach
1/2 cup Cauliflower crumbles/rice (sauteed in ghee)
1 medium slice Bacon (pastured; optional)

Instructions


  1. Add Ghee to a pan on medium heat and sauté the shredded cauliflower.
  2. Add the spinach leaves and cauliflower rice as the base of the bowl.
  3. Begin to arrange the chopped veggies and poached eggs on top. (See notes on how to poach an egg)
  4. Cook bacon in a pan on medium-high heat to desired crispiness, remove from pan and place in a plate with kitchen paper to soak up some of the fat, then cut into bite size pieces and sprinkle on top of veggies and eggs. 
  5. Serve and enjoy!
  6. Garnish options: fresh herbs, chopped chili, fresh lemon, salt and pepper to sprinkle on top, a drizzle of Brain Octane Oil on top.
