1/2 cup Cauliflower crumbles/rice
1/2 tbsp Extra virgin olive oil
2 medium egg Egg (pan fried)
1 cup Spinach
1 avocado(s) Avocado (sliced)
2 medium Carrots (chopped)
2 medium Radish (chopped)
1/2 cucumber(s) Cucumber (chopped)
2 medium slice Bacon (pastured; optional)


  1. Cook bacon in a pan on medium-high heat to desired crispiness, remove from pan and place on a plate with kitchen paper to soak up some of the fat.
  2. Add olive oil to a pan on medium heat and sauté the shredded cauliflower. When cooked, transfer it to the base of your bowl and add the spinach leaves.
  3. Using the same pan, pan-fry eggs to the desired doneness.
  4. Begin to arrange the chopped veggies and eggs on top.
  5. Cut the bacon into bite-size pieces and sprinkle on top of veggies and eggs. 
  6. Serve and enjoy!


Garnish Options 

  • Fresh herbs, chopped chili, fresh lemon, salt, and pepper to sprinkle on top.
