Ingredients


2 cup Brown rice, medium-grain, cooked (or quick-cook microwavable rice of choice)
1 whole lime(s) Lime juice (fresh) (for sauce)
3 cup Lettuce, romaine (chopped)
1 can (15oz) Sweet corn, canned, undrained (drained, rinsed)
1 can (15oz) Black beans, canned (drained, rinsed)
2 tomato Roma tomatoes (diced)
1 cup Salsa, ready-to-serve
1 cup Sour cream, light (of plain Greek yogurt)
1 cup Guacamole (store-bought)
2 tbsp Cilantro (coriander) (chopped)

Instructions


  1. Divide rice among bowls and squeeze lime juice over top
  2. Add the lettuce, corn, black beans, and tomatoes in sections.
  3. Top with salsa, sour cream, and guacamole.
  4. Sprinkle cilantro over top and enjoy.
