1 large | White onion (diced) |
1 tbsp | Extra virgin olive oil |
1 1/3 kg | Butternut squash (peeled and diced) |
3 large | Apple (peeled and diced) |
6 cup | Water |
1 1/2 tsp | Sea Salt |
1/2 tsp | Cinnamon |
1/4 tsp | Nutmeg, ground |
1/4 tsp | Ground cloves |
1. In a large pot, sauté onion with oil at a medium heat until softened.
2. Add all remaining ingredients to the pot.
3. Increase temperature to high and bring to a boil. Reduce heat to medium and boil gently for 15 minutes or until squash and apples are soft.
4. Remove pot from heat. Blend soup with immersion hand blender until completely smooth and serve.
