This recipe is so very versatile! You can barbecue so very many things, and then you can serve them in so very many ways! Use your favorite barbecue sauce!
Ingredients
2 can (20oz)
Jackfruit, canned, in water
(drained; OR-2 blocks 3-grain tempeh, crumbled -OR- 2 cups cooked brown rice, lentils, farro or barley (or a mixture thereof!))
1 onion(s)
Sweet onion
(large; diced)
1 large
Carrots
(shredded)
1 can (15oz)
White beans, canned
(drained)
1/2 cup
Barbecue sauce
(prepared)
12 large leaf
Lettuce, butterhead (Boston)
1 ring
Red onion
(thinly sliced, soaked in red wine vinegar)
Instructions
Add all the ingredients except for the barbecue sauce to a skillet over medium heat. Cook until the mixture is browned and the vegetables are wilted. Add your favorite barbecue sauce and continue to cook for about 10 more minutes till all the ingredients are coated with sauce and the mixture becomes thick. Serve on leaves of bib lettuce and garnish with shredded carrot, cabbage, or quick-pickled red onion if desired.
