A super simple dish to make ahead of time in your crockpot and enjoy with some quick-cooked rice!
Ingredients
2 can (20oz)
Jackfruit, canned, in water
1/2 cup
Wheat flour, whole wheat
(or all purpose flour)
2 tbsp
Sazon seasoning
1 dash
Salt and pepper
(to taste)
2 large
Yellow onion
(sliced lengthwise into strips)
1 cup whole
Olives
((1 large jar of stuffed green manzanilla))
Instructions
Prepare a large shallow baking dish sprinkling the contents of one Sazon packet into it with a Tbsp of water. (Or: plug in your crockpot, drop in the water and seasoning packet).
Drain the jackfruit, rinse and pat dry. Toss them in flour to coat and then arrange them either in the baking pan or crockpot.
In a hot skillet, salt the onions and sauté them until transparent, being careful not to brown them, and adding a Tbsp of water to the pan as necessary to keep them from sticking.
Pour the onions over the jackfruit, add the jar of olives, brine and all, and sprinkle the other packet of seasoning over the top.
Bake, covered, in a 350-degree oven for about 30 minutes or in the crockpot over low heat for at least 30 minutes or until you arrive home from Liturgy! Serve over rice, couscous, or mashed potatoes.
