2 can (15oz) | Chickpeas, canned, drained |
1 large potato | Sweet potato (baked, or microwaved, cooled, and peeled) |
1/4 cup | Maple syrup, pure |
1/2 tsp | Cinnamon (or pumpkin pie spice blend) |
1 piece, 1/2-inch | Ginger root |
Add everything to a high-speed blender, or food processor and blend until smooth and creamy. You may choose to add a little more maple syrup as needed to thin the hummus to the desired consistency. Serve with apple or pear slices, animal crackers, and top with chopped toasted pecans and a drizzle of just a bit more maple syrup!
