| 2 medium potato | Sweet potato (baked; peeled) |
| 2 tbsp | Cocoa powder, unsweetened |
| 1 cup | Powdered/icing sugar (plus a little extra if necessary)) |
| 1 tsp | Vanilla extract, pure |
Combine ingredients,(flour, cocoa, baking powder, salt. Add sweet potato puree, brown sugar, vanilla, applesauce and walnuts, and mix well. Bake in a parchment-lined 8X8 pan for 30 minutes at 350 degrees...or until a toothpick in the center comes out clean. Allow to cool completely before frosting.
To make Sweet Potato Chocolate Frosting, combine all ingredients ( 2 Baked and completely cooled sweet potatoes, cocoa powder, icing sugar and vanilla) in a mixing bowl and whip until fluffy.
