Ingredients


1 cup Wheat flour, whole wheat
1/2 cup Cocoa powder, unsweetened
1 tsp Baking powder
1/2 tsp Salt
1 cup Sweet potato purée, canned (or mashed overripe banana (about 2 bananas))
1/2 cup Brown sugar
2 tsp Vanilla extract, pure
1/3 cup Applesauce, unsweetened
1/2 cup Walnuts (chopped raw; (optional))
2 medium potato Sweet potato (baked; peeled)
2 tbsp Cocoa powder, unsweetened
1 cup Powdered/icing sugar (plus a little extra if necessary))
1 tsp Vanilla extract, pure

Instructions


Combine ingredients,(flour, cocoa, baking powder, salt.  Add sweet potato puree, brown sugar, vanilla, applesauce and walnuts, and mix well.  Bake in a parchment-lined 8X8 pan for 30 minutes at 350 degrees...or until a toothpick in the center comes out clean. Allow to cool completely before frosting. 

To make Sweet Potato Chocolate Frosting, combine all ingredients ( 2 Baked and completely cooled sweet potatoes, cocoa powder, icing sugar and vanilla) in a mixing bowl and whip until fluffy.
