2 cup | Brown rice, short-grain, dry (a quick-cook variety works best) |
4 cup | Water |
2 tbsp | Soy sauce, tamari |
1 clove(s) | Garlic (minced) |
1 piece, 1-inch | Ginger root (grated) |
1 large | Yellow onion (diced) |
2 medium | Carrots (shredded or diced small) |
1 medium pepper(s) | Red bell pepper (diced) |
1/2 cup | Frozen green peas |
1/2 cup | Sweet chili sauce |
Place everything but the peas into a rice cooker and cook until rice is tender. When the rice is finished, stir in fresh or frozen green peas, and the hot or sweet chili sauce.
Next...Broil the top! Turn it all out onto a shallow baking dish and pop it under the broiler just long enough to gently crisp up the top….just like real-fried rice!
Garnish with some chopped scallions and serve with extra soy or chili sauce.
