Ingredients


908 gm Oven Roasted Turkey Breast (thinly sliced)
908 gm Ground Beef, Lean 93/7 (grass fed ground)
1 clove(s) Garlic (minced (or more to taste))
1/2 tsp Salt
1/2 tsp Black pepper
250 gm Rao's Marinara Sauce, Sensitive Formula (1 cup)
425 gm Ricotta Cheese, Low Fat (15 oz.)
120 gm Mozzarella cheese, partially skimmed (1 cup)
2 large Egg
1/2 tsp Parsley, dried
1/2 tsp Oregano, dried
1/2 tsp Onion powder
1/2 tsp Garlic powder
1/2 tsp Salt
1/4 tsp Red pepper flakes
1/3 cup Parmesan cheese, grated
250 gm Rao's Marinara Sauce, Sensitive Formula (1 cup)
120 gm Mozzarella cheese, partially skimmed (1 cup)

Instructions


  1. Preheat oven to 375 degrees F.
  2. Cook ground beef in a large skillet until browned completely (I don't add oil or fat to the pan, the meat has enough fat). Add minced garlic, salt and pepper. (Optional) Once meat is cooked, add any spices you like then mix 1 cup of marinara sauce into the meat. Set aside.
  3. In a bowl combine ricotta cheese, 1 cup mozzarella (save the other cup for topping), eggs, seasonings (adjust amount of seasoning to your taste) and parmesan. Set aside.
  4. To assemble in a 9 by 13 casserole dish:

    1. Cover the bottom of the dish with a layer of the thinly sliced, deli chicken.
    2. Add a layer of the cheese mixture.
    3. Spread half the meat mixture over the cheese.
    4. Create another layer of deli sliced turkey or chicken over the meat and repeat again with the rest of the cheese and meat mixture. Finish with the final slices of turkey or chicken.
    5. Top with 1 cup marinara sauce and 1 cup mozzarella cheese. Bake 30 minutes covered then uncovered for 10 minutes. Give it a quick 5 minute broil if you like a crispier topping.

Cut into 10 pieces.

Notes:

Turkey - buy thinly sliced oven roasted, low-fat or fat-free turkey. I use 1.5 lbs - 2 lbs of deli sliced turkey.

Marinara Sauce - be careful, look at the nutrition label. Most marinara sauce has a lot of sugar. You want 6 grams or less per serving (less is better).

Rao's is a great brand with no added sugar. Total sugars per serving in the 'Sensitive' formula is 4 grams of sugar per 1/2 cup serving.

Also, if you tend to get heartburn or reflux from tomato sauce try Rao's sensitive formula. You're welcome ; )
