1/4 cup Cilantro (coriander) (chopped, for salsa)
1 clove(s) Garlic (minced, for salsa)
1 whole lime(s) Lime juice (fresh) (for salsa)
1/4 tsp Ginger, ground
1/4 tsp Garlic powder
511 gm Atlantic Cod (or white fish of choice; fillets)
1 tbsp Coconut oil
4 medium tortilla(s) Whole wheat tortilla (lowest sodium option available)
1 cup Lettuce, romaine (shredded)
1 medium head Red cabbage (outer leaves removed)
1 whole lime(s) Lime juice (fresh)

Instructions


  1. In a medium-sized bowl, combine the mango, avocado, cilantro, garlic, and lime juice. Cover and refrigerate until ready to use.
  2. In a small bowl, combine the ground ginger, and garlic powder. Sprinkle the mixture on both sides of the fish, spreading with your fingers
  3. Melt the coconut oil in a cast-iron or non-stick skillet over medium-high heat. Add the fish fillets and cook on each side until cooked through and easily flakes. Remove from heat.
  4. Break the fish into small pieces using a spatula and coat with lime juice.
  5. To assemble, add the flaked fish to the tortilla, followed by the lettuce, red cabbage, mango avocado salsa, and a squeeze of lime juice.
