Cabbage Slaw with Orange Dressing

Ingredients


1/2 medium head Red cabbage (shredded)
2 medium Carrots (peeled, spiralized)
1/2 medium Red onion (finely chopped)
1 beet(s) Beets, raw (finely sliced or grated)
2 cup Arugula
1/4 cup hulled Sunflower seeds
2 tbsp Sesame seeds
1/2 cup Orange juice (for dressing)
1/4 cup Parsley, fresh (or mint, finely chopped, for dressing)
1/4 cup Extra virgin olive oil (for dressing)
1 pinch Salt and pepper (for dressing)

Instructions


1. Combine dressing ingredients in a small bowl and set aside.

2. In a large salad bowl, combine all salad ingredients prepared as per directions.

 

3. Pour salad dressing over top and toss.

Carrots

are high in beta carotene which is converted into vitamin A in the body and is important for healthy skin, immune health and vision
