1 cup Silk Original Coconut Milk
1/2 cup Almond milk, unsweetened
1/4 cup Chia seeds
1/4 cup Coconut, shredded, unsweetened
1/2 tsp Vanilla extract, pure
1 dash Cinnamon
2 tsp Coconut sugar (or honey )
1/4 cup Mixed berries

Instructions


Toast shredded coconut in a large skillet over medium low heat until brown and toasty. Set aside.

Place coconut milk, almond milk, chia seeds and vanilla in a blender and blend until smooth. Pour into bowl and stir in some toasted coconut.

Alternatively you may whisk ingredients together in a bowl. This method will result in a pudding with more texture.

Let sit for a few hours in the fridge or eat right away. Top with fresh fruit, cinnamon and toasted coconut.
