|1 cup||Silk Original Coconut Milk|
|1/2 cup||Almond milk, unsweetened|
|1/4 cup||Chia seeds|
|1/4 cup||Coconut, shredded, unsweetened|
|1 tbsp||Cacao powder, raw|
|1/2 tsp||Vanilla extract, pure|
|2 tsp||Coconut sugar (or honey )|
Toast shredded coconut in a large skillet over medium low heat until brown and toasty. Set aside.
Place coconut milk, almond milk, chia seeds and vanilla in a blender and blend until smooth. Pour into bowl and stir in some toasted coconut.
Alternatively you may whisk ingredients together in a bowl. This method will result in a pudding with more texture.
Let sit for a few hours in the fridge or eat right away. Top with cinnamon and toasted coconut.
