1/2 cup cubes Tofu, silken, soft (for dressing)
1/4 tsp Honey (or agave, for dressing)
1 clove(s) Garlic (for dressing)
1 tbsp Lemon juice (for dressing)
1 tbsp Red wine vinegar (for dressing)
2 tsp Dijon mustard (for dressing)
1 tsp Capers, canned (for dressing)
1 pinch Salt and pepper (to taste, for dressing)
1 tsp Parmesan cheese, grated (to taste, for dressing)
2 cup Lettuce, romaine
1 tbsp, slices Almonds, toasted
1/4 cup Croutons, plain


Combine the dressing ingredients in a food processor or blender and process or blend until smooth.

For the salad I usually use romaine lettuce, toasted almonds and croutons. For those who eat Parmesan cheese, they can add it themselves.
