Everyone needs a morning with pancakes every so often. Even if you're dealing with candida, you can enjoy these fluffy morning cakes!
Ingredients
3 medium
Egg
1/4 cup
Macadamia milk
(or dairy-free Milk of Choice)
1/2 tsp
Vanilla extract, pure
2 tbsp
Coconut oil
1 dash
Himalayan salt
1 dash
Cinnamon
1/2 tsp
Baking soda
1 scoop
Collagen peptides
(Vital Proteins)
1 tbsp
Flaxseed meal (ground)
1/4 cup
Coconut flour
1 tbsp
Coconut, shredded, unsweetened
(topping)
1 tsp
Cacao nibs, raw
(topping)
1 tbsp
Almond butter
(topping)
Instructions
Add dry ingredients to a bowl & whisk everything together, before adding in the wet ingredients - everything but the coconut oil! Do not over mix the batter. If the batter is lumpy, that is okay.
Heat a skillet with a spoonful of coconut oil.
Place the batter on the skillet. The batter will become a bit doughy, so spread the batter with a fork to make a circular shape.
Cook on medium to high heat until you see little air bubbles appear on the pancake.
Flip & cook the other side. This recipe makes about 8-10 pancakes based on your preferred size.
