3 medium Heirloom tomatoes (or a handful of cherry heirlooms)
2 ball(s) Mozzarella cheese (or container of bocconcini)
6 leaf Basil, fresh
2 tbsp Extra virgin olive oil, garlic-infused (or luxury olive oil of your choice)
2 tbsp Balsamic vinegar (preferrably reduced)
1 dash Salt
1 dash Black pepper


Slice the tomatoes and cheese. Arrange in a pretty way or just throw together (as it’ll likely get tossed around in the lunchbox).

Keep basil whole or chop finely and sprinkle with the olive oil, balsamic and salt & pepper. So easy. So lunchbox-fancy!
