Ingredients


2 large Tomato (cut into slices)
200 gm Mozzarella cheese, partially skimmed (cut into slices)
1/4 cup Arugula (rocket)
1/4 cup Basil, fresh
1 tbsp Balsamic vinegar
2 tbsp Olive Oil, Extra Virgin (extra virgin if possible)
1 dash Sea Salt (to taste)

Instructions


  1. Arrange the slices of tomatoes and mozzarella in alternating layers.
  2. Scatter the basil leaves and arugula on top and season with salt.
  3. For the dressing, mix together the olive oil and balsamic vinegar. Drizzle the dressing over the tomatoes, mozzarella, basil, and arugula.
  4. Serve and enjoy!
