1/4 cup Chia seeds
1/4 cup Pistachio nuts (finely chopped)
2 tbsp Sliced almonds
2 tbsp Pumpkin seeds (pepitas)
1 tsp Cardamom, ground
1/2 tsp Nutmeg, ground
2 date pitted Medjool date (diced)
1 tsp Vanilla extract, pure
1 whole lemon(s) Lemon peel (zest)
1 tsp Cinnamon (preferably Ceylon cinnamon)
1 tbsp Coconut milk (canned)
1 cup Almond milk, vanilla, unsweetened, Silk


1. Mix all ingredients together, except for the lemon zest and coconut milk.

2. Let sit in the fridge for 4+ hours, overnight is most convenient.

3. Serve in a bowl topped with fresh lemon zest and coconut milk.
