1 1/2 cup | Hemp milk (hemp bliss unsweetened at Independant) |
1/4 tsp | Cardamom, ground |
1/4 tsp | Coarse salt |
1/2 cup | Quinoa, uncooked (rinsed) |
1/4 cup whole/halves | Macadamia nuts, unsalted (raw or toasted) |
1/2 tsp | Vanilla extract, pure |
1/2 cup | Water |
1/2 cup | Blackberries |
In a saucepan, bring quinoa, 3/4 cup hemp milk, water, vanilla, salt, and cardamom to a boil. Reduce heat and simmer, covered, until liquid is absorbed, 15 minutes.
Remove from heat and let rest five minutes, then fluff with a fork.
For each serving, top 1/2 cup quinoa with 1/2 cup hemp milk, macadamia nuts and berries.
