1/3 cup Butter, unsalted (melted and cooled, or coconut oil)
1 medium Egg
1/2 cup Whole milk 3.3% (or coconut milk)
1/2 cup Plain yogurt, 1- 2% M.F. (or coconut milk)
1 tsp Vanilla extract, pure
1 medium Banana (s)
2 cup Spelt flour
1/2 cup Coconut sugar (or raw sugar)
2 1/2 tsp Baking powder
1/2 tsp Cinnamon
1 dash Nutmeg, ground
1/2 cup Coconut, shredded
1/2 cup Sunflower seed butter
1/2 cup Pumpkin seeds (pepitas)
1 cup grated Carrots
1/2 cup Raisins, seedless (sultana)

Instructions


Beat butter, egg, milk, yogurt, vanilla and banana until combined.

Whisk remaining ingredients together then add to butter mixture and mix gently. Let sit for a minute or two.

Bake at 350°F for 15 - 20 minutes for mini-muffins and 30 - 35 minutes for large, or until toothpick comes out clean.
