2 cup grated Carrots
4 date pitted Medjool date
1 cup Rolled oats, dry
1 tsp Vanilla extract, pure
1/2 cup Chickpea flour
1 cup Pecans (chopped)
2 tbsp Pea Protein Powder (scoop)
1/2 tsp Cinnamon
1/4 tsp Ginger, ground
1/4 tsp Nutmeg, ground
1/2 cup Almonds, raw (ground up)

Instructions


  1. Combine all the ingredients in a food processor and pulse until combined.
  2. Place in fridge for 30 minutes to firm slightly and then roll into one-inch balls.
  3. Roll in crushed almonds, and keep in an air-tight container in the refrigerator for up to one week.
