Carrot Cake Energy Bites

All the deliciousness of a slice of carrot cake in the form of a nutritious energy bite!


1 1/2 cup grated Carrots
4 date pitted Medjool date
1/2 cup Rolled oats, dry
2 tbsp Maple syrup
1 tsp Vanilla extract, pure
1/2 cup Oat flour
1/4 tsp hulled Hemp seeds, shelled
1/4 tsp Cinnamon
1 dash Ginger, ground
1 dash Nutmeg, ground
1 cup Coconut, shredded, unsweetened


  1. Combine all the ingredients except unsweetened coconut in the food processor and pulse until combined.
  2. Place in fridge for 30 minutes to firm slightly and then roll into one-inch balls.
  3. Roll in unsweetened coconut and keep in an air-tight container in the refrigerator for up to one week.


  • Oats contain soluble fiber which may help to prevent sugar spikes by delaying the absorption of glucose in the blood.
