|1 cup grated||Carrots|
|4 date pitted||Medjool date|
|1 1/2 cup||Coconut, shredded, unsweetened|
|1/2 cup||Rolled oats, dry|
|2 tbsp||Maple syrup|

|1/2 cup||Oat flour|
|1/4 tsp hulled||Hemp seeds, shelled|
|1/8 tsp||Ginger, ground|
|1/8 tsp||Nutmeg, ground|
1. Combine all the ingredients in the food processor and pulse until combined.
2. Place in fridge for 30 minutes to firm slightly and then roll into one inch balls.
3. Roll in unsweetened coconut and keep in an air tight container in the refrigerator for up to one week.
