1 tsp Baking powder
1/4 cup unpacked Brown sugar
1/4 cup Buckwheat flour
1/2 cup grated Carrots
1 tsp Cinnamon
2 medium egg Egg
2 tbsp Extra virgin olive oil
3 tbsp Flaxseed meal (ground)
1/2 cup Partly skimmed milk, 1% M.F. (mix with vinegar)
1 dash Salt (to taste)
1/2 tbsp Vinegar, white (mix with milk)
1 cup Wheat flour, whole wheat


Preheat oven to 375C. Prepare a muffin tray and set aside.

Mix milk and vinegar together and let stand for 5 minutes.

Sift the dry ingredients in a bowl. Add milk mixture, olive oil, and eggs and whisk until no lumps remain. Fold in the grated carrots. If you want, you can also add a handful of raisins at this stage.

Pour into prepared tray and bake for 15 minutes, or until a skewer inserted in the center of the muffin comes out clean.
