2 cup grated Carrots
5 piece, 1-inch Ginger root (One five-inch piece)
2 tbsp Extra virgin olive oil (Cold-extracted)
1 tsp Lemon juice (Fresh-squeezed)
1 tsp Lemon peel (zest) (Organic)

Instructions


  1. Peel ginger root by rubbing the edge of a spoon on the ginger.
  2. Grate carrots and ginger into a medium bowl.
  3. To grate the lemon, use the side of the grater with the smallest holes.  Gentle pressure works the best.
  4. Mix olive oil with lemon juice.  Add to salad.  Mix to combine.
  5. Spoon into two serving bowls.

Notes:

  • If the carrots are organic, it's fine to leave the skin on as it contains nutrients.
