2 cup Coconut, shredded, unsweetened
1/3 cup grated Carrots
3 tbsp Coconut oil
0.03 tsp Stevia sweetener, liquid (optional)
1/3 cup Golden raisin, seedless

Instructions


In a high-speed blender or food processor, combine coconut, carrots, and coconut oil.

Process on low-medium speed, until the ingredients begin to fold in on themselves to create a cookie dough-like consistency.

Taste the "dough". Add a bit of stevia and pulse to combine, if you desire a bit more sweetness.

Fold in raisins.

Place balls of dough onto a parchment-lined cookie sheet using a 1-tablespoon dough scoop.

Place in the freezer for 10 to 15 minutes to harden. S

tore in an airtight container in the fridge or freezer for up to 1 month.
