1/2 cup | Cashew nuts, roasted |
1 tbsp | Extra virgin olive oil |
1/2 cup | Chicken broth (stock), low sodium (NO SALT) |

1. On med-high heat in a pan, toast cashews for about 6-8 mins until a shade darker.
2. In a large frying pan, over med-high heat, heat oil, add broccoli, and stir fry for about 3 mins (vibrant green colour).
3. Add garlic and broth and cook for another 4-5 mins under broccoli is tender-crisp (not soft).
4. Add cashews and serve!
Broccoli is a cruciferous vegetable which is a great source of fiber and vitamin C!
