|1 head||Broccoli, raw (cut into florets)|
|1/2 cup||Cashew nuts, roasted|
|2 tbsp||Soy sauce, low sodium|
|1 tbsp||Canola oil (or olive oil)|
|1/2 cup||Chicken broth (stock) (organic)|
1. On med-high heat in a pan, toast cashews for about 6-8 mins until a shade darker.
2. In a small bowl, combine broth & soy sauce.
3. In a large frying pan, over med-high heat, heat oil, add broccoli, and stir fry for about 3 mins (vibrant green colour).
4. Add garlic and liquid ingredients from the bowl and cook for another 4-5 mins under broccoli is tender-crisp (not soft).
5. Add cashews and serve!
Broccoli is a cruciferous vegetable which is a great source of fiber and vitamin C!
