1 head | Broccoli, raw (cut into florets) |
1/2 cup | Cashew nuts, roasted |
2 tbsp | Soy sauce, low sodium |
1 tbsp | Canola oil (or olive oil) |
1/2 cup | Chicken broth (stock) (organic) |
1 clove(s) | Garlic |
1. On med-high heat in a pan, toast cashews for about 6-8 mins until a shade darker.
2. In a small bowl, combine broth & soy sauce.
3. In a large frying pan, over med-high heat, heat oil, add broccoli, and stir fry for about 3 mins (vibrant green colour).
4. Add garlic and liquid ingredients from the bowl and cook for another 4-5 mins under broccoli is tender-crisp (not soft).
5. Add cashews and serve!
Broccoli is a cruciferous vegetable which is a great source of fiber and vitamin C!
