Cauliflower Chickpea Patties

Ingredients


1 large head Cauliflower (florets broken apart)
1 can (15oz) Chickpeas, canned, drained (rinsed)
1 medium pepper(s) Red bell pepper (diced small)
1 medium Yellow onion (diced small)
2 clove(s) Garlic (minced)
1 tsp Turmeric, powder
1 tsp Cumin
1 pinch Salt and pepper (to taste)
1/2 tbsp Flaxseeds
1 1/2 tbsp Water
1/4 cup Walnuts (crushed)
1/4 cup chopped Watercress

Instructions


  1. Preheat oven to 375.
  2. Mix flaxseed 'egg' by combining whole flaxseeds and water into a small bowl, set aside to congeal. 
  3. Steam cauliflower until soft.
  4. Saute onion and bell pepper over low heat until soft.
  5. Add garlic and saute for another minute or so.
  6. In a large bowl, smash chickpeas up well with a fork, the bottom of a cup or a potato masher. 
  7. Add cauliflower and smash up as well.
  8. Add all other ingredients (except watercress) and stir until combined.
  9. Mix should be wet but come together in a ball without falling apart.
  10. Carefully make a ball in your hands with the mix, a little bigger than a golf ball.
  11. Press and flatten ball between hands to make a patty.
  12. Place patty on oiled pan or parchment lined baking dish.
  13. Continue with the rest of the mix.
  14. Bake for 25 Minutes, flip the patties. and bake for another 20 minutes or until browned.
