2 medium head | Cauliflower |
1 cup, shredded | Mozzarella cheese, partially skimmed |
1 cup shredded | Cheddar cheese, reduced fat (18%) |
1/2 cup | Bread crumbs, plain, gluten free |
1 tsp | Salt |
Preheat oven to 375 degrees.
Boil the cauliflower florets until tender. The more finely chopped the cauliflower, the more it will resemble macaroni. Drain and pat dry and then place in baking dish.
Sprinkle salt evenly and then add cheese evenly to cover the cauliflower.
Sprinkle the breadcrumbs across the top of the dish.
Bake for 15 minutes and then set oven to broil and broil for 5 minutes, until the top browns.
