Makes a delicious alternative to rice that can accompany most dishes including my Chilli Con Carne, Chicken Cacciatore and Kickin' Butter Chicken Curry - Yum!

Ingredients


454 gm Cauliflower crumbles/rice
3 tbsp Ghee
1 tsp Himalayan sea salt
1 tsp Black pepper

Instructions


  1. If your cauliflower isn't pre-crumbled, use the 'grate' blade on a food processor or a box grater to "rice" the cauliflower. 

  2. Melt the ghee in a medium skillet, here you can add scallions if you'd like to add a little more flavor and sauté for a minute.

  3. Add the grated cauliflower, salt and pepper and give it a good stir

  4. Cover the pan then turn the heat down low and slowly cook for 5-7 mins, stir every couple of minutes to ensure the rice doesn't stick to the bottom and burn.

  5. For more flavor stir in fresh herbs a couple of minutes towards the end like basil leaves, parsley or coriander.

  6. Enjoy!
