57 gm Bacon (topping)
1/4 tsp Black pepper (to taste, for topping)
4 tbsp Cranberries, dried
4 tbsp Extra virgin olive oil (for dressing)
2 tbsp Honey (for dressing)
6 cup Kale (chopped)
1/4 cup Lemon juice (for dressing)
1/4 cup Parmesan cheese, grated (for dressing)
1/4 cup Parmesan cheese, grated (topping)
4 tbsp Pine nuts, dried
1/4 tsp Salt and pepper (to taste, for dressing)


Combine the lemon juice, honey, olive oil, cheese and salt/pepper, and mix well in a large non-metal bowl.

Add the chopped kale and toss to coat. Set it aside for 30 minutes or more to tenderize the kale, tossing here and there.

Add raisins, pine nuts, crispy bacon and more grated parmesan cheese to the dressed kale and toss well.

Divide the kale between plates, garnish with extra cheese and crack some pepper on top.

Eat and enjoy!
