1/2 medium head Cauliflower
1 medium egg Egg
1 clove(s) Garlic
1/2 tsp Oregano, ground
2 cup shredded Mozzarella cheese
1/2 cup Parmesan cheese, grated
1 pinch Sea salt, fine
1 dash Black pepper
1/8 tsp Red pepper flakes
1/4 cup Parsley, fresh (finely chopped)


  1. Pre-heat oven to 425F or 220C or gas mark 7.
  2. Cover the baking tray with greaseproof paper.
  3. Wash and grate the cauliflower, then put it in a large bowl.
  4. Add the egg, garlic clove, oregano, 1 cup of grated mozzarella, grated parmesan.
  5. Season with salt and pepper.
  6. Combine everything together to make a dough.
  7. Flaten the dough out onto the baking tray with the greaseproof paper.
  8. Bake for 25 minutes until golden and dried out.
  9. Wash and finely cut the fresh parsley.
  10. Remove the baking tray from the oven with oven gloves.
  11. Add the remaining mozzarella, the crushed red pepper flakes and the fresh parsley.
  12. Place the baking tray back in the oven and cook for a further 10-15 minutes until cheese has melted.
  13. Remove the baking tray from the oven with oven gloves.
  14. Cut the cheesy cauliflower bread into slices and transfer them to a bowl or plate.
  15. Serve hot with a choice of your favourite dip.
