3 cup | Cauliflower (florets, or use pre-riced cauliflower) |

1 tbsp | Almond butter |

1 tbsp | Almond milk, unsweetened (optional) |
Step 1: Steam the cauliflower florets in a steamer or over a pot of boiling water until soft, or use ready-made cauliflower rice.
Step 2: Remove cauliflower from heat and combine in a food processor with the nutritional yeast, almond butter, salt, pepper, nutmeg, and almond milk and pulse until completely mashed together, but not runny. If the mixture is too thick, add one tablespoon of almond milk.
Step 3: Transfer mixture to a bowl and finish with toppings of choice, such as sesame seeds, chopped chives, green onions or slivered almonds.

Cauliflower is a cruciferous vegetable that is high in fiber and B vitamins!
