This quick and easy lentil veggie quesadilla is one of the many healthy lunch ideas you will find in this post.
Ingredients
1/2 cup
Lentils, canned
1/2 tsp
Cumin
2 tbsp
Salsa, ready-to-serve
(or more to taste)
1/4 cup
Carrots
(grated or matchstick)
1/2 cup
Baby spinach
(roughly chopped)
1/4 cup
Cheddar cheese
(or cheese of choice, shredded)
4 small tortilla(s)
Whole wheat tortilla
1 cup
Red grape
1 cup whole
Sugar snap peas
Instructions
In a medium bowl, roughly mash the lentils with a potato masher or a fork.
Add the cumin, salsa, carrot, and spinach to the bowl and stir to combine.
Divide the mixture between two tortillas. Add cheese (you can add more if you wish). Top with remaining tortillas.
Melt butter over medium heat in a skillet. Place quesadilla and cook for 3-5 minutes on each side, until golden brown and crispy
Slice into thirds or quarters and add to a lunch box with the grapes and snap peas.
