Chewy-Choco Protein Bars

3 spray (about 1/3 second) Olive oil cooking spray (as needed)
4 scoop Whey protein powder, chocolate
1/2 cup Flaxseed meal (ground)
2 tbsp chopped Apricot, dried
2 tbsp Dried cherries (chopped)
1 tbsp Pumpkin seeds (pepitas)
1 tbsp Almonds, raw (chopped)
2 tbsp Sesame seeds
1/4 cup Almond butter
6 tbsp Water (as needed)


1. Lightly coat an 8-inch square baking pan with olive oil spray.
2. In a large bowl, combine all ingredients, using a wooden spoon. The mixture may be dry. If too crumbly to hold together, add water, 1 tablespoon at a time, until mixture can be formed into a ball (or add an extra tablespoon of almond butter).
3. Press mixture into the pan and cut into 6 or 8 equally-sized bars.
