Chewy Chocolate Cranberry Cookies

2 1/2 cup Almond flour/meal, Bob's Red Mill
1/4 tsp Sea Salt
5 tbsp Honey (can use agave or maple syrup for vegan option)
1/2 cup Butter, salted (melted (use coconut oil or ghee if dairy is not tolerated))
1 tbsp Vanilla extract, pure
1/2 cup Dark chocolate chips
1/2 cup Cranberries, dried (unsweetened or sweetened with apple juice)
1/4 tsp Baking soda


1.In a large bowl combine almond flour, salt, baking soda, choc chips and cranberries
2.In a small saucepan simmer butter, honey, vanilla for
2-3 min
3.Mix wet ingredients into dry
4.Place dough in the center of a large piece of parchment paper or plastic wrap
and form into a large log approximately 2½ inches in diameter
5.Place in freezer for one hour, until firm, unwrap and cut into ⅛ inch thick slices
6.Place slices on a baking lined with parchment paper
7.Bake at 350° until lightly golden, 9-11 minutes
8.Cool and serve
