1/4 cup diced Celery (diced)
4 large leaf Lettuce, butterhead (Boston) (washed and dried)
1/4 cup Mayonnaise, low fat
2 tbsp Raisins, seedless (sultana)
1 medium Red Apple (diced)
2 breast(s) Rotisserie chicken breast, skinless (diced)


In a small bowl, mix together all the filling ingredients.

To serve, spoon about ½ cup (125 mL) of the filling down the centre of the lettuce leaf and wrap it up.
